The Damascus Gyuto is a full size chefs knife built to not only look great, but to perform excellently as well. These knives are each handmade by Will and Matt in our Montana shop.

The Gyuto was the Japanese response to the Western chef's knife; this is my interpretation of that iconic Japanese shape. Each of these knives is freehand-forged from our House made Damascus steel. Forging the distal taper and bevels into the blade allows us to achieve a dynamic blade grind that releases food better and cuts with lower friction than a flat or convex grind. Each handle is hand-shaped from curly Narra from Greenberg woods, in a modified coffin shape—it fills the palm, and the taper toward the blade draws your hand in to give excellent control over the blade. The spines and finger choils of the knives have been fully rounded over; this makes the knife far more comfortable to hold and is an often-overlooked detail in production culinary knives.
The heel of the knife is tall, which gives plenty of room for finger clearance off the cutting board as well as allowing a little extra room for great edge geometry. We focused on cutting performance with these knives: the edges are thin and the heat treat is hard. If treated well, these knives will last generations.
I often equate high-performance chef's knives to supercars—they do excellent work for what they're built for (racing on the track), but you wouldn't want to take them off-roading. These knives will hold up best when used on a wooden cutting board, dried off after use, and of course, they do not go in the dishwasher.
Please note: these knives are carbon steel, which requires more care than the average stainless Walmart chef's knife. The steel will develop a beautiful patina with time, and the patina it builds will actually help protect against the bad type of corrosion. If they do get rusty, however, we are happy to restore and resharpen them.
