The Brut De Forge Santoku is a tall, thin utility knife built to cut great while you're using it, and look great when you're not.

The Santoku is an iconic Japanese utility knife, a tall heel and rounder tip differentiate it from a classic western utility knife, these knives are best suited for smaller cutting tasks, chopping herbs, processing vegetables, and anything else you might not need a full sized blade for, they pair excellently with the Gyuto to cover anything you may need to slice in the kitchen. The santoku is forged thinner than the Gyuto, making it ideal for the lighter duty tasks where precision is more important than blade length. Each of these knives is freehand forged from 52100, forging the distal taper and bevels into the blade allows us to achieve a dynamic blade grind that releases food better, and cuts with lower friction than a flat or convex grind. Each handle is hand shaped from Arizona desert iron in a modified coffin shape, it fills the palm, and the taper towards the blade sucks your hand in to give excellent control over the blade. The spines and finger choils of the knives have been fully rounded over, this makes the knife far more comfortable to hold, and is an often overlooked detail in production culinary knives. The heel of the knife is tall, which gives plenty of room for finger clearance off the cutting board, as well as allowing a little extra room for great edge geometry. We focused on cutting performance with these knives, the edges are thin and the heat treat is hard, if treated well, these knives will last generations.

 

I often equate high performance chefs knives to super cars, they do excellent for what they're built for, racing on the track, but you wouldn't want to take them off-roading. These knives will hold up best used on a wooden cutting board, and being dried off after use, and of course, they do not go in the dishwasher.

 

Please note- these knives are carbon steel, which requires more care than a the average stainless Walmart chefs knife. The steel will develop a beautiful patina with time, and the patina they build will actually help against the bad type of corrosion. If they do get rusty however, we are happy to restore and resharpen them.
